Ongoing organizing

 Been organizing my hiking, camping, fishing, load bearing webbing / ruck collection, prospecting equipment etc the last few weeks. Tearing up old carpet , taking clutter out etc. Today was a great day, lots done! Moved less used gear up top of my storage cabinets, packed away canoe dry bags into a single Tupperware bin, camping and prospecting gear all tucked away up high. So much more room now. 










Lunch - Pesto Chicken & Corned Beef

 Used up the leftover pesto chicken from yesterday. Toasted Portuguese bun in onion oil in the Lodge Combo Cooker. French’s mustard, several layers of peppery corned beef, fresh tomatoes, raw onions, the pesto chicken topped with slabs of smoked Gouda cheese. Mmmm 😋 







 

Fancy Salad 🥗

 Made this salad with English cucumbers, avocado, shredded kale, broccoli, cauliflower, carrot, black pepper, paprika, dried chilies, avocado oil, balsamic vinegar and feta cheese. It was epic!



High Ground Gear HG730 Modular Ruck

 I got this ruck about a month ago from https://highgroundgear.com . The HG730 is a modular Molle platform ruck, so you can put pouches on it to fit your needs. It’s designed to be worn over a plate carrier, yet I’ve hiked with it without wearing a plate carrier and it’s VERY comfortable. There is a sleeve that fits a 3 liter hydration bladder, I use a HydraPak Force bladder with a HydraPak Hydrant squeeze bulb at the drinking end. 

The shoulder straps have hidden channels for routjng Comms wires, or hydration tubes. The waist straps are very well padded, and have a 5 column Molle field on each side. I set mine up with a bear spray holster and canteen pouch on the right side, and a fold up dump pouch (for tinder and berry gathering) and canteen pouch on the left side. 

On the back, I have two HGG fold out vertical pouches on each side, a TYR TACTICAL jungle butt pack on the lower middle part of the ruck, and a large utility pouch on top. This layout changes frequently depending on my needs, and that’s the beauty of this ruck. It’s adaptable to any mission. I can haul tools for trail maintenance, gear for hiking, pack out an animal after hunting etc. 


















Pesto Chicken sandwich

 Made an absolute killer pesto chicken sandwich tonight. Started with a split chicken breast, seasoned with pepper, paprika, grilled in onion oil (see previous post) with garlic in my Lodge Combo Cooker cast iron. Added onions, hot pickled peppers, and Classico Pesto sauce. Toasted a Portuguese bun in the lid of the combo cooker, and added fresh tomato slices, Swiss and smoked Gouda cheese. It was epic. Got 3 more pieces of pesto chicken for sandwiches tomorrow. 












Making onion oil

 Onion oil is used in a lot of Asian cooking. Basically it’s cooking oil infused with onions, garlic, ginger and sometimes chilies and peppercorns. 

You start by heating up cooking oil in a wok, then adding chopped onions, onion greens, garlic/ginger and constantly stir it. Takes about 20 minutes to cook out the flavours from the onions into the oil. Once cooked, you strain the oil and filter thru a cloth. Now it’s ready to be used for very flavourful cooking. 














Lodge Combo Cooker

 Got this recently, it’s a bad ass bit of cast iron cookware. The lid is a skillet, technically your getting two pieces of cookware in one. Can be used as a pot, pot & skillet, Dutch oven, on the stove, in the oven or at camp on a campfire or with charcoal briquettes. Bang for the buck!
